
Ingredients:
8 cloves of garlicminced
1 medium red onion, diced
skinless, boneless chicken breasts, diced/sliced
1 cup chicken broth
1 cup tomato sauce
sliced carrots
frozen peas
sliced red bell pepper (optional but highly recommended)
1/2 tsp sugar salt and pepper
1 tbsp cornstarch dissolved in 2 tbsp cold water
Procedure:
1.Sautee garlic and onions until fragrant (about 2 minutes).
2.Add chicken and broth. Simmer for 5 minutes.
3.Add tomato sauce. Simmer until chicken is well cooked.
4.Add the carrots, peas, and bell pepper. Simmer another 2-3 minutes.
5.Add the sugar (balances the acidity of the tomato sauce) Season with salt and pepper.
6.Add cornstarch mixture to thicken sauce. Simmer another minute or two.
Serve with hot steamed rice.
